BEAR COOKING

Mbear likes to cook. Although she is particularly fond of salmon, she will try most recipes at least once. She likes sushi, New Mexican chilis (red or green), spicy dishes, and good desserts! You will find her favorite recipes here.

MBEAR'S GREEN CHILI STEWChilis!
(Vegetarian Version)
The recipe is only as hot as your chili. Happy cooking!

INGREDIENTS
1 cup chopped onions (yellow or white variety)
2-3 cloves of garlic, peeled and coarsely chopped
1 cup of carrots chopped very fine
1/4 cup of vegetable oil (canola, corn, or safflower are good)
1/4 cup parsley, minced
4-5 large potatoes, peeled and cut in cubes
2 litres of water
*1 to 2 cups chopped green chili (roasted, peeled, most seeds removed)
salt, to taste
1 cup coarsely shredded cheddar, or other yellow cheese
1 dozen flour tortillas or other soft flatbread

INSTRUCTIONS
1. In a large, deep skillet [an iron Dutch oven is good] saute onions, garlic, and carrots in vegetable oil until lightly browned.
2. Add parsley, potatoes, and salt, and continue to cook until potatoes are lightly browned.
3. Add the salt and water and simmer on low-to-medium heat for about 10 to 20 minutes.
4. Add the green chili and simmer for another 10-15 minutes, or until potatoes are tender.
5. Ladle into a bowl, sprinkle with shredded cheese, and serve with tortillas. (Butter and honey are nice on the tortillas.)

Makes 4-6 servings.

*The green chilis should be the large, 12-15 cm long, kind of hot variety, not the extra hot jalpenos which are small and dark green.





SALMON PEABODY
(This is the result of a successful experiment by "Geenius" )

INGREDIENTS
1/2 lb. salmon fillet
1/2 tsp. thyme
1/2 tsp. cinnamon
1/4 c. lemon juice

INSTRUCTIONS
Place salmon in plastic bag with lemon juice; sprinkle thyme and cinnamon on surface.
Marinate for 1-2 hours.
Bake at 350 degrees for 20-30 minutes, depending on thickness and whether you like fish rare (ugh).
Serve with Near East almond pilaf.
